Site Fermentation Project is the barrel-aged alter-ego of Hop Nation, the place where the brewers experiment with a variety of mixed-fermentation brews. A true hybrid approach – expressing the complexity of both winemaking and brewing but always with a focus on conveying site (or terrior in wine speak). Born from this project are mixed-fermentation beers, brewed and blended in Footscray and often co-fermented with unique parcels of single vineyard fruit.

Now in its second year, the Lapin celebrates the cherry harvest and uses organically grown Victorian Lapin cherries from Mark’s Farm in Benalla. This year we mixed things up, adding the cherries directly into a 3000 litre wooden foedre barrel, where a sour blonde ale had been quietly ageing. It re-fermented there for a few months, meaning this year’s vintage brings a bit more funk, but once again is a crisp, refreshing sour.
